Dump-and-Go Chicken Tortilla Soup

dumb and done meals

Crock pot6 ingredientsNo chopping
Bowl of chicken tortilla soup topped with tortilla chips

Why it's dumb & done

No browning and no chopping. Everything goes in raw, and you shred the chicken right in the pot at the end.

Why kids will like it

Crunchy tortilla chips on top make soup fun. Kids can crush their own chips and add as much cheese as they want.

The recipe

You'll need

  • 1.5 lb boneless, skinless chicken breasts (thawed)
  • 1 can (10 oz) diced tomatoes with green chiles
  • 1 can (15 oz) black beans, drained
  • 1 cup frozen corn
  • 4 cups chicken broth
  • 1 packet taco seasoning

Do this

  1. Add everything to the crock pot and stir.
  2. Cook on low 6–8 hours or high 3–4 hours.
  3. Take out the chicken, shred it with two forks, and stir it back in.
  4. Top with tortilla chips, cheese and sour cream.
