Dump-and-Go Crock Pot Chili

dumb and done meals

Bowl of crock pot chili topped with sour cream and green onions

Why it's dumb & done

One quick step to brown the beef, then it's just opening cans. It also freezes well, so make a double batch.

Why kids will like it

It's mild, not spicy, and the fun is in the toppings. Set out shredded cheese, sour cream and Fritos and let them build their own bowl.

The recipe

You'll need

  • 1 lb ground beef
  • 1 can (15 oz) kidney beans, drained
  • 1 can (15 oz) black beans, drained
  • 1 can (28 oz) crushed tomatoes
  • 1 packet chili seasoning
  • 1 small onion, diced (optional)

Do this

  1. Brown the ground beef (and onion, if using) in a skillet and drain the grease.
  2. Add the beef and everything else to the crock pot and stir.
  3. Cook on low 6–8 hours or high 3–4 hours.
  4. Top with cheese, sour cream or chips.
