Sheet Pan Chicken Fajitas

dumb and done meals

Sheet pan6 ingredients25 min
Grilled chicken fajita strips with red and green peppers on a skillet, with tortillas and sides

Why it's dumb & done

The chicken, peppers and onion all roast together on one sheet pan, so there is no standing at the stove and only one pan to wash. The peppers and onion are your veggie, already built in.

Why kids will like it

Everyone builds their own fajita, so picky eaters can skip the peppers and add extra cheese. Kids can help fill and roll their own tortillas at the table.

The recipe

You'll need

  • 1½ lb boneless, skinless chicken breasts or tenders, sliced into thin strips
  • 3 bell peppers (any colors), sliced
  • 1 medium onion, sliced
  • 2 Tbsp olive oil
  • 1 packet (about 1 oz) fajita seasoning
  • 8 small flour or corn tortillas

Do this

  1. Heat the oven to 425°F and line a large sheet pan with foil or parchment.
  2. Put the chicken, peppers and onion on the pan. Drizzle with the oil, sprinkle on the seasoning and toss until everything is coated. Spread it out in a single layer (use two pans if it looks crowded).
  3. Bake 18–22 minutes, stirring once halfway, until the chicken is cooked through (165°F) and the edges of the veggies are browned.
  4. Warm the tortillas in the microwave under a damp paper towel for 20–30 seconds.
  5. Set the pan on the table with cheese, salsa, sour cream or avocado, and let everyone build their own.
