Crock Pot Baked Potato Bar

dumb and done meals

Crock pot6 ingredients10 min prep
Baked potatoes topped with melted cheddar and sour cream on a wooden cutting board

Why it's dumb & done

The potatoes cook in the crock pot while you do your day, so there's no oven to heat up. The toppings are just cheese, broccoli and sour cream in bowls.

Why kids will like it

Everybody gets to build their own, so picky eaters can keep it plain. Kids can scrub the potatoes, sprinkle the cheese and pick their own toppings.

The recipe

You'll need

  • 6 medium russet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 2 cups shredded cheddar cheese
  • 1 bag (12 ounces) frozen broccoli florets
  • 1 cup sour cream

Do this

  1. Scrub the potatoes and poke each one a few times with a fork. Rub them with the olive oil and sprinkle with the salt.
  2. Wrap each potato in foil and set them in the crock pot. You don't need any water.
  3. Cover and cook on low for 7 to 8 hours, or on high for 4 to 5 hours, until a fork slides in easily.
  4. Cook the broccoli in the microwave following the bag directions. Chop it small for little ones.
  5. Put the cheese, broccoli and sour cream in separate bowls. Cut each potato open, fluff the inside with a fork and let everyone build their own.
